  • 4 Chunk Steaks (4oz)
  • 3 Tbsp neutral frying oil
  • 1 ½ cups mint leaves
  • 1 ½ cups cilantro leaves
  • 1 cup scallions, thinly sliced diagonally
  • ½ cup Thai basil leaves
  • ½ cup crushed toasted cashew nuts or peanuts
  • ½ pomelo or grapefruit, peeled, segmented, and separated into bits
  • 8 celery stalks, thinly sliced diagonally
  • 1 red chili, thinly sliced diagonally

For the Dressing:

  • Juice from 5 limes
  • ½ cup Thai fish sauce (or plant-based alternative)
  • 1 Tbsp palm sugar
  • 1 bird's eye chili, thinly sliced
  • 1 Tbsp minced lemongrass
  • 1 garlic clove, minced
  • 4 fresh kaffir lime leaves, thinly sliced
  • 1 tsp galangal paste

Instructions:

1. Cook the Steaks

  • Heat a pan on medium-high heat for about 2 minutes.
  • Add the oil and place the 4 steaks in the pan.
  • Sear one side of the steaks for about 2-2 ½ minutes, lightly moving the pan from time to time until the steaks are deep brown.
  • Flip the steaks to the other side and cook for an additional 2 minutes, or until nicely browned.
  • Remove the steaks from the pan and set them aside to rest.

2. Prepare the Dressing

  • In a small bowl, combine all the dressing ingredients.
  • Stir until the palm sugar is completely dissolved.

3. Assemble the Salad

  • In a large salad bowl, place the cilantro, mint, Thai basil, scallions, celery, and pomelo or grapefruit segments.
  • Thinly slice the rested steaks and add them to the salad bowl.
  • Pour the dressing over the salad and lightly toss to combine.

4. Garnish and Serve

  • Garnish the salad with toasted cashews or peanuts and a few extra pomelo or grapefruit bits.
  • Serve immediately and enjoy the fresh, vibrant flavors of this Thai Beef Salad.
